2 quick and healthy meals


So not exactly a recipe post but more of a what I eat in a day - this weekend I've been obsessed with these two meals, they are both super cheap and really easy to make - plus they are really healthy so it's wins all around!! Bonus points are both are veggie! I've really been trying to eat healthy and cut sugar out and I know a lot of people are as well so hopefully this may inspire a little.

So for breakfasts I've been loving avocado and scrambled egg probably like most of your instagram feed ( who I give full props for presentation cause it's so hard to do!) - for me they are like the dream team! for extra healthy goodness you can add in chia seeds with either your avocado if its smashed and mushed up or your scrambled egg!! 

And for tea I've been loving this deliciously ella recipe - it takes like 15 minutes to prep and tastes delicious! I didn't use the miso paste and I used a tomato and chili puree so with the chili seeds it was a little spicy but not too bad so you can spice it up to your own tastes!  You could add in whatever you wanted to change this up a bit as well!

Easy on the go breakfast


You need: a baking tray, butter/ spray oil, 6-7 eggs ( depending on your baking tray i would say 1 egg for 2 cups..holes.. whatever they are called!), milk and whatever ingredients you choose! 
Lately since it's too cold for me to drive and as the winds are a bit mental I've had to find solutions to quick and easy breakfasts ( and when I say quick I do mean like 5 minutes!). I love making these egg muffins as you can do them the night before and  they can last a few days and you can literally chuck in whatever you like! 
When I made these I only had tomato and courgettes in so thats what went in, I have previously put in things like spinach, mushrooms, avocado, broccoli.... literally whatever you like! you could even mix in some chia and flaxseed for that extra health kick. 
How to make them:1. Literally whisk the eggs and milk together like you would for scrambled egg and pre-heat your oven to 180 degrees. 2. butter or spray your baking tray, 3. chop up your veg and chuck em in ( you can even mix and match - the more veg in the less egg that is needed as well!)  4. pour in your egg  mix 5. chuck in the oven and leave for 10-12 minutes - ta-daaaaa done. then just plate em up, cover them and leave them in the fridge. Then pop them in a container for on the go! - Perfect!

a healthy easy to make work snack idea

I've been looking at other ways to keep healthy while at work as I was getting a little bored of apples or carrots. Whilst I was in Aldi I came across these chia and oat crispbreads I thought they would be perfect! Chia is really good for you and something I have been trying to put in my diet more. I decided to whip up my own guacamole to put on top as avocado is something I am trying to eat more of too and it was super simple!! 
1) get a ready to ripe avocado, I didn't know these existed till the other week so make sure you get one because it makes your life A LOT easier. put the avocado in a bowl and cut it up into small pieces and then mash it up.( - if your avocado isn't properly ripe your going to really struggle to mash it as it comes out quite chunky and also doesn't taste as nice)
2) put in some garlic powder and some chili infused oil ( this will depend on how strong you want it) 
3) cut up some baby tomatos and chuck these in and you are DONE. 
Literally it's that easy, I usually make this in the morning before work and take half in this cute little jar and spread it over the crispbread. one avocado can spread over 4-5 crispbreads. YUM. I'm thinking about trying hummus next!

Recipe - sweet potato + spinach Mac and cheese

Yay it's a new recipe! This has just been tried and tested by myself and it is YUM. Guaranteed this was winged a little bit.....Also you can expect to see one common thing in most of my recipes - Sweet potato, not only is it much healthier I just can't get enough of it! ( Hello sweet potato fries!)

As I said I absolutely winged this recipe so I think in the future I will do a much more updated and improved version but I still really liked this so I wanted to put it up anyway! I was inspired by this recipe by Naturally Ella but I am really bad at adding flour to recipes so wanted to take this out and had the idea of using Mascarpone instead but when I was at the supermarket I saw Garlic and herb philly and thought that would be better since I was going to add garlic and herbs anyway - no brainer right!? 
First off Ingredients! ( I made enough for 3-4 portions. )
2 - sweet potatos
250g grated cheddar( I bought this already grated) 
Garlic and Herb philadelphia ( the small pack.... and I used just under 3/4 of it)
Just over half a pack of spinach.
Lucy Bee coconut oil ( standard!) 
Pasta ( shape of your choice, I'm obsessed with the swirly one at the moment!)
1. peel and cut your sweet potato and then chuck it in the microwave for 8-9 minutes.
2. Boil some water and chuck your pasta in and cook till it's al dente, 
3. chop up your spinach chuck in some lucy bee and then fry your spinach to soften it. 
4. Now this is the step I would change, I mashed my sweet potato but if you can puree it instead. The easiest way to describe it is that I had a kinda brownie mix texture instead of a sauce to pour over the pasta. 
5. once your spinach has softened mix in the philly. because I was making a pretty big amount I used just over half the packet. 
6. mix in your sweet potato with the spinach and philly.
7. because my mix was quite solid I then put half the pasta in the ceramic and then poured some cheese over it and then spread this mix over the top and then did this one more time to use up all the pasta and mix and then sprinkled the remaining cheddar on top.
8. cook it in the oven on around Gas Mark 5 for around 8-10 minutes( really just until the cheese has melted) 
9 EAT. 
It's such a simple recipe, like my other one it's pretty cheap to make, I'm not sure how healthy it is with all that cheddar on it but I think next time I would swap the cheddar out for something like Mozzarella or Halloumi maybe?

Recipe: Sweet potato & Kale egg bake


Ingredients: ( Serves 1)
1 sweet potato
1/2  tin mixed beans ( I would maybe recommend just kidney beans as some of the smaller ones did get a little hard in the oven - still tasty!)
1 - tin(or box?) chopped tomatoes ( with herbs to add more flavour!)
2 handfuls of Kale
1 eggs
Paprika
Coconut Oil ( or normal oil if you don't have this)
You could even add like butternut squash, all sorts!
Step 1: Wash your beans and put them on to boil & boil them for 4 minutes ( check what the tin says!)
Step 2: peel and cut your sweet potato into little cubes and microwave for 4 minutes.
Step 3: Chop up your Kale and fry then add the chopped tomatoes once cooked. 
Step 4: Mix the sweet potato, kale, tomatoes and beans together, add some paprika ( and any other herbs) 
Step 5: pour into your round casserole and then make a hole in the top
Step 6: Whack your oven on gas mark 6, crack your egg into the hole and put in the oven for around 15-17 minutes.
Et voila a tasty egg bake!
